Grandma's Collards

1 T olive oil

5 slices of bacon, chopped

2 cloves garlic, minced

1/2 t salt

1/2 t pepper

1/4 t red pepper flakes

3 c chicken broth

1 lb fresh collards, washed and cut into 2" pieces

Heat oil in large pot. Add bacon and cook until crisp. Add onion and cook until tender (approx 5 mins). Add garlic and cook just until fragrant (1 min). Add collards and fry until wilted. Pour in chicken broth, salt, pepper and red pepper flakes. Bring to boil, reduce heat to low, cover and cook until greens are tender (approx 45 mins), stirring occasionally. Remove lid and continue to cook until liquid is absorbed. Serve with hot sauce.
